Domaine de l'écu was founded by Guy Bossard, who has been ‘in harmony with Mother Nature’ his whole life, and who, since childhood, wanted to become a wine producer like his father, his Grandfather and previous

generations of his family. When chemical fertilizers became a popular option for many wineries in the 1970’s, the Bossard family continued to rely on natural methods, working the soil and using organic compost When Guy returned from military service in 1972, he began preparing to apply for biodynamic certification, despite criticism and doubt from his neighbors and colleagues. His wines were certified biodynamic by Demeter in 1996. The domaine is located in the hamlet of Le Landreau in Sèvre et Maine, Muscadet's best region of production. They have 17 hectares (42 acres), with vines averaging 55 years old. They produce 3 different cuvees, each masterfully crafted to highlight the expression of the specific soil types. The wines are fermented "sur lie", on the yeast, to prevent oxidation and impart full flavor and a slight spritz to the finished product. Under the direction of dynamo Fred Niger, who purchased the property from legendary farmer Guy Bossard, the domaine has maintained its reputation as a top grower of terroir transparent, age-worthy Muscadet. Fred is as fanatical in the cellar as he is in the vineyards. His passion and connection to the natural world guide his every move. He is present, observant and mindful, always with the aim of working in tandem with the forces of nature and never against them. This commitment is strongly felt in the hauntingly peaceful room of amphoras, where Fred explores the energy exchange between vessel and wine, with the ultimate goal of transmitting this energy to those of us who have the pleasure of drinking these vibrant, lively, deep and pure expressions of soil and grape. This vintage is named "Classic" not because it’s basic but because it is a pure expression of old school muscadet. Crystal clear and straw yellow in color, it has notes of salty lime, grapefruit & pear. The mouth is rich with a beautiful acidity and freshness. A no brainer for ice cold fresh oysters or any mollusk, crustacean or fish really!
