Domaine Giachino Savoie Pet-Nat ‘Giac Bulles’

The Giachino estate has been producing organic wines for over 20 years. Their vineyards are based in the Chartreuse regional park in the department of Savoie. The estate is comprised of various small, organically farmed vineyards on the slopes of Mount Granier, encompassing the communes of Chapareillan, les Marches and Aprement. Respect for nature and the environment has always been close to their hearts.  Their organic wines are produced in full compliance with the AB (Organic Agriculture) and Nature & Progrès (Nature and Progress) labels. Becoming more deeply involved with their land and their vines and cultivating only wines unique to the Savoie brings out their region’s true flavors. The grapes are pressed slowly and gently using a pneumatic system and vats are thermo-regulated to 5°C in order to clarify the wine. This process allows them to reduce and even eliminate the use of sulfites. They then extract the clear fluid, which will ferment with the yeast that is naturally present in the grapes and the temperature is maintained at 15°C in order to bring out the full aromas. This pet-nat is la blend of Jacquere and Monduese which are fermented using the ancestral method creating an elegant and feather light Alpine sparkler. It spent seven months on its lees and was disgorged and bottled with no SO2.Crisp with ripe yellow fruit and subtle white floral notes meeting with crushed stone and a bracing acidity. Perfect for sipping on its own as an aperitif.
