Cava is Spain’s most famous sparkling wine and in order to be called Cava, the wine has to be made using the Champagne method, or método tradicional, where the secondary fermentation happens in the bottle. This Cava is made with the native grapes to the Penedés area of Catalonia, Trepat and Garnacha, which are grown in the Alt Penedes, where the highest elevation plots are located in the region. Fermented in stainless steel vats; Base wine rests on the lees for 45 days; Secondary fermentation in the bottle, a la Methode Champenoise; Raised on the lees for 18 to 20 months before disgorgement; Bottled with no dosage. Fresh, fine bubbles, citrus, mineral, medium bodied, elegant, concentrated, dry, and long. perfect with Grilled tuna, fish stew, Asian foods and of course Pan Con Tomaté.

In 2003, Vinos de Terruños was born, founded by Jose G. Pastor and with the subsequent incorporation of his daughter Teresa Pastor. They set out in collaboration with small local producers growing native grapes biodynamically as well as various expert winemakers from each region of Spain to bring us handmade cuvees from old, green and sustainable vineyards with a focus on terroir and authenticity.
